It’s Father’s Day on Sunday, so I asked my Dad what he wanted to do. He’s chosen a BBQ. When I asked what he wanted to eat, he asked for something different.

I know he likes burgers, and his favourite meat is lamb, so I’ve been experimenting with some interesting recipes, and this is my absolute favourite! Roll over Lamb and Mint Burgers, its Apricot time. These burgers are sweet with a spicy chilli kick, and taste amazing with soft cheeses and a light salad.


To bash out these burgers you’ll need:

1 red onion, very finely chopped

2 garlic cloves, crushed

1 tsp cumin

1tsp and coriander

1tsp chilli flakes

1tsp black pepper

½ tsp sugar

500g pack lean lamb mince

8 dried apricots, finely chopped

2 tbsp fresh breadcrumbs/potato flour

1 medium egg

To BBQ these beasts you have to:

  1. Put the lamb, onion, garlic, cumin, coriander, chilli, pepper, sugar and apricots in a bowl and combine together with your hands until well mixed
  2. Whisk the egg, add to the bowl and mix well
  3. Add the breadcrumbs/potato flour and mix well
  4. Shape into 4 burger patties
  5. Fry in a pan with oil, or grill in the BBQ
  6. Enjoy topped with grilled onion and goats cheese
